Pigs and chickens. We were due to take the pigs to the butcher last week. However, they decided they weren’t going. No matter how hard we tried, we could not get them to load into the trailer. They would get there front ends in the trailer but wouldn’t make that final little hop. Farmer Betsy’s idea was to feed them in the livestock trailer. So, this past weekend, I built some steps from pallets and plywood and parked the trailer in the pig enclosure. After a couple of days of feeding them only in the trailer, the pigs got the idea. I finally got them all in the trailer at once. We will now have pork in a couple of weeks.
The chickens on the other hand were much easier. We got them all loaded and to the butcher last Wednesday. We now have pasture-raised whole chickens available as well as packages of chicken breasts, leg quarters, and wings. We also have chicken hearts and gizzards. These guys were French hybrids and heritage breeds and will be some of the best chicken you will ever taste.
This week, Betsy’s Kitchen will be offering Paleo bread, Paleo Spicy Chocolate Brownies, Paleo Apple Cider Donuts, and Flour-less Chocolate Cake.
